Miso Roasted Brocolli

We can’t get enough of this miso roasted brocolli. It’s such a quick, easy and tasty side dish. The miso paste gives it a umami flavour but it doesn’t taste like an asian-style dish and pairs really well with some feta cheese and a drizzle of tahini.

  • This is also delicous with carrots or pumpkin, you’ll just need to cook for a little longer.
  • You could also swap out the broccoli for brussels sprouts or cauliflower.
Ingredients
  • 1 head of broccoli
  • 1-2 Tbsp butter
  • 1 Tbsp miso paste
  • 2 tsp honey or maple syrup
Method
  1. Preheat the oven to 200 degrees fan bake.
  2. Roughly chop the broccoli into florets and finely slice the stalk.
  3. Melt the butter in a small saucepan over a low heat, add the miso, honey and mix well.
  4. Remove from the heat and drizzle over the broccoli. Toss well to make sure every floret is coated in the sauce.
  5. Roast for 20 minutes until cooked through and charred in places.
Variations
