Raw Broccoli Salad

This salad gets better over time as the lemon juice helps to soften the broccoli, while the dates soften and sweeten the salad which also helps balance out the onion. Basically this salad is the epitome of ‘there’s no I in team.’

  • Because this salad is great the next day it’s perfect for lunches or to take to a BBQ or picnic.
  • Add fresh herbs like mint, parsley, coriander or dill.
  • Add lentils or a grain for a more substantial salad.
  • Add feta or Halloumi
  • Swap almonds for pistachios or pumpkin seeds.
  • Add grilled chicken.
Ingredients
  • 1 broccoli head
  • 2 Tbsp olive oil
  • 1 lemon (juice)
  • Salt and pepper
  • ½ small red onion (finely diced)
  • ¼ cup dried dates (finely sliced)
  • ½ cup sliced almonds (toasted)
Method
  1. Using a sharp shave your broccoli, forming a couscous texture and fine stalk slices.
  2. Add to a bowl and squeeze over lemon juice and olive oil; season with salt and pepper.
  3. Add onion, dates and almonds, stir well to fully incorporate. Allow to sit and soften for at least 30 minutes before serving.
