Sweet Potato Fries

Sweet potato fries can do no wrong. Perfect served alongside crumbed fish, your favourite burger a steak or just by themselves.

  • Swap out the sweet potato for Agria potatoes. Note these will take a little longer to cook.
  • Garlicky and paprika spiked fries. Drizzle with oil, add 2 crushed garlic cloves, 1/2 tsp paprika, salt and pepper. Toss to coat evenly. Once cooked sprinkle with finely chopped fresh parsley.
Ingredients
  • 4-6 medium potatoes or sweet potatoes (cut into thin sticks)
  • 2-3 Tbsp olive oil or coconut oil
  • Salt and pepper
Method
  1. Heat oven to 200 degrees celsius (fan force)
  2. Heat the oil in a baking tray for a few minutes so it’s nice and hot before adding the sweet potato chips.
  3. Toss well and  generously season with salt and pepper (making sure your tray is large enough for each fry to have a bit of space, you may need to spread them over two trays)
  4. Cook for 15 to 20 minutes before flipping the fries and cooking for an additional 10 minutes, or until they are golden and crispy.
