Tahini is a creamy paste made from ground sesame seeds. It has a nutty and slightly bitter flavour and is a staple in Middle Eastern cuisine. Tahini is used to make hummus, dressings, and sauces, and can also be used as a spread or dip.
Our favourite tahini is from Ceres Organics hulled tahini – it’s runny, smooth and has an unbeatable taste.
If you can’t get your hands on the ceres one, look for the runniest version available as this will work best in our recipes. If you are using a thicker tahini you’ll need to adjust the amount of liquid.
Hulled vs Unhulled Tahini:
Hulled tahini has a milder and creamier flavour compared to unhulled tahini. The removal of the outer shell of the sesame seeds results in a smoother texture and a more neutral taste. Hulled tahini is generally lighter in colour.
