Baked Prawns with Tomato, Feta, Lemon and Orzo

Whip up this super simple dish in under 30 minutes! Roast tinned cherry tomatoes, feta, prawns, and lemon in the oven to create a flavourful sauce for the orzo. Served alongside a fresh rocket salad.

Make the dressing for the salad (Store in a airtight jar in the fridge)

Ingredients:

  • 2 Tbsp apple cider vinegar
  • 3 Tbsp olive oil
  • 1 tsp dijon mustard
  • 1 tsp maple syrup

Method:

  1. Add all ingredients into a glass jar and shake well to combine.


Toast 2 tbsp of pine nuts
(Store in a airtight jar in the pantry)

Tips 

  • You can tell when the prawns are cooked as they will go from grey to a soft, pale pink colour. Keep an eye on them as you don’t want to overcook them as they become rubbery. 
  • If you’re after a saucier pasta, add a little pasta water until you reached the desired consistency.

  • Swap out the tinned cherry tomatoes for fresh cherry tomatoes.
  • Swap out the rocket for baby spinach.

Ingredients

Baked prawns with tomato, feta, lemon and orzo

  • 400g tin cherry tomatoes
  • ¼ cup olive oil
  • 1 lemon (juice and zest)
  • 1 tsp dried oregano 
  • 2 garlic cloves (crushed)
  • 400g raw frozen prawns (defrosted) 
  • 200g feta (roughly torn into chunks) 
  • 1 ¼ cups orzo 
  • ½ cup parsley (finely chopped) 
  • Salt and pepper

Rocket salad

  • 120g rocket (1 bag)
  • 1 small fennel bulb (finely shaved) 
  • 2 Tbsp pine nuts (toasted)
  • 2 Tbsp apple cider vinegar
  • 3 Tbsp olive oil
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
Method
  1. Preheat the oven to 200 degrees fan bake and boil a pot of salted water for the orzo. 
  2. Add the tinned cherry tomatoes, olive oil, lemon juice, zest, oregano and garlic to a baking dish (approx. 23 x 23cm, depth 6cm). Scatter over the feta and pop in the oven to cook for 10 minutes.
  3. Meanwhile prepare the salad, add the rocket and fennel to a large salad bowl or platter and scatter over the pine nuts. To make the dressing simply add all ingredients into a glass jar and shake well to combine. Set the dressing aside to dress the salad just before serving.
  4. After 10 minutes, add the prawns to the baking dish and cook for 15-20 minutes.
  5. While the prawns are in the oven, cook the orzo as per packet instructions – reserve a little pasta water (about a ¼ cup).
  6. Once the prawn and tomato dish has cooked, remove it from the oven and stir through the orzo and a little pasta water if needed.
  7. Garnish with some fresh parsley and season with salt and pepper; serve alongside the rocket salad.
