Balsamic and Sun-dried Tomato Roasted Chicken Thighs 

Chicken thighs are marinated in a flavourful blend of balsamic vinegar, sun-dried tomatoes, mustard and garlic and roasted to perfection, delivering a burst of savoury goodness in every bite. Simple, yet incredibly delicious – a must-try for your next dinner!

  • 600g chicken thighs
  • 4 sun-dried tomatoes (finely chopped)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1 Tbsp Dijon mustard
  • ½ Tbsp honey
  • 2 cloves garlic (crushed)
  • 1 tsp dried oregano
  • Salt and pepper
  1. Preheat the oven to 200 degrees, fan bake. 
  2. Add all of the ingredients (except the chicken thighs) to a large bowl and mix well to combine. Add the chicken thighs and toss well to coat. 
  3. Add the chicken to a roasting dish or lined baking tray and pop in the oven to cook for 35-40 minutes until golden brown and cooked through.
