Prepare the black bean, sweet potato patties. (store in an airtight container in the fridge)
Ingredients:
- 400g cooked black beans, 400g tin (drained and rinsed)
- 1 small orange sweet potato (1 cup, grated)
- 1 egg
- 3 Tbsp flour or spelt flour
- ½ tsp Paprika
- ½ tsp ground cumin
- ½ tsp ground coriander
- Salt and pepper
Method:
- To prepare the patties add the black beans to a medium-sized bowl, mashing roughly with the back of a fork.
- Add the remaining ingredients and mix well.
- Form into four patties.
Prepare the BBQ sauce (store in a glass jar in the fridge)
Ingredients:
- 2 Tbsp olive oil
- 1 small onion (super finely diced)
- 4 cloves garlic (crushed)
- 1 tsp paprika
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp chilli flakes
- 4 Tbsp tomato paste
- 2 Tbsp honey
- 1 Tbsp apple cider vinegar
- 1 Tbsp tamari
- 1 tsp wholegrain mustard
Method:
- Add the olive oil to a small saucepan over low-medium heat. Add the onion and garlic and cook for 5 minutes or so until the onions have softened, add the spices and chilli flakes and cook for a couple more minutes.
- Add the tomato paste, honey, apple cider vinegar, tamari and mustard and turn up the heat. Cook on high for a few minutes before turning down to a gentle simmer. Simmer for 5-7 minutes until nicely reduced and the consistency of a store-bought BBQ sauce.
- Remove from the heat and set aside to cool. Once cooled pop in a glass jar.
