Filled Lettuce Cups with Mexican Spiced Mince

These warmer evenings have us craving light, refreshing meals and these filled lettuce cups are a great substitute for burritos or tacos. The lettuce is filled with a Mexican spiced mince and topped with a delicious balance of fresh and creamy toppings.

Prepare the spice mix. 

Ingredients:

  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • ½ tsp chilli flakes
  • 1 tsp coconut sugar

Method: 

  1. Combine all ingredients into a small glass jar and store in the pantry. 

Finely dice one capsicum and store it in an airtight container in the fridge. 

Cook the corn. 

  1. Start off by removing the husks from two corns on the cob and add to a pot of boiling water to cook for 5-7 minutes until cooked through.

  2. Using a sharp knife shave the corn off the cob and store it in an airtight container in the fridge. 

Tips

  • When looking for a perfectly ripe avocado remove the black tip and if the flesh is green it’s perfect and if it’s brown it’s past it’s best but perfect to freeze and pop in your green smoothie.
  • When cooking mince you want to make sure the mince is browned and all the moisture has evaporated before adding sauces, beans etc otherwise the mince will taste tough and not nice and tender.

Vegetables

  • You can make guacamole with the avocado if you’d prefer. Simply mash the avocado and add a ¼ of a red onion (finely diced) the juice of half a lemon, a handful of finely chopped coriander and a pinch of salt and pepper.
  • if you can’t get iceberg lettuce swap for cos or serve mince and toppings along side our slaw.

Protein

  • For a vegetarian option swap mince for a 400g tin of kidney beans (rinsed and drained). Add at the same time as the black beans along with ¼ cup of water or stock and 1 Tbsp of tomato paste.

Other

  • You can serve the mince in burritos or tacos if you’d prefer. If you’re doing that finely slice the iceberg lettuce instead of leaving the leaves whole.
  • You can add some grated cheddar cheese.
  • Add hot sauce for a spicy kick.

  • 400g tin of black beans (rinsed and drained)
  • 1 brown onion (diced)
  • 1 capsicum (diced)
  • ½ punnet of cherry tomatoes (cut in half)
  • 2 Tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • ½ tsp chilli flakes
  • 1 tsp coconut sugar
  • 2 cloves of garlic (crushed)
  • Salt and pepper
  • 2 corn on the cob
  • 1 head of iceberg lettuce (leaves separated)
  • 125g sour cream
  • 1 avocado (cut into cubes)
  • ½ punnet of cherry tomatoes (cut in half)
  • 1 cup of coriander (roughly chopped)
Method

 

  1. Start off by removing the husks from the corn and popping in a pot of boiling water to cook for 5-7 minutes until cooked through.
  2. Heat a large pan over medium heat, add the olive oil, onion, capsicum and cherry tomatoes; cook for five minutes or until softened. Turn up the heat to high and add the mince.
  3. Cook for five minutes or so until browned. Add the garlic, spices, coconut sugar, salt and pepper and cook for another few minutes.
  4. Add the black beans and cook for 5 more minutes.
  5. While the mince is finishing cooking, get everything else ready. Using a sharp knife shave the corn off the cob and place into a bowl, also place cherry tomatoes, coriander and avocado into seperate bowls. Gently remove the leaves from the iceberg lettuce and place onto a plate.
  6. Pop everything on the table and get everyone to build their own ‘lettuce tacos’.
