Honey Mustard Roasted Carrots

So simple but impressive. These Honey Mustard Roasted Carrots are always a crowd pleaser and incredibly simple to make. Perfect alongside a garden salad and some meat or with some grains, and leafy greens to turn it into a tasty salad.

  • Swap walnuts for toasted almonds, pine nuts or pistachios.
  • Add fresh herbs like parsley, coriander and / or mint.
  • Add or swap carrots for parsnips.
  • Make into a more fulling salad by adding marinated lentils or quinoa and fresh greens like spinach or rocket.
Ingredients
  • 4 carrots
  • 2 Tbsp olive oil
  • Salt
  • 2 tsp honey
  • 2 tsp wholegrain mustard
  • 2 Tbsp of walnuts (roughly chopped)
Method
  1. Pre-heat the oven to 200 degrees fan bake.
  2. Cut the carrots into sticks, drizzle over olive oil and a sprinkle of salt.
  3. Pop in the oven to cook for 30 minutes or until golden brown and starting to go crispy.
  4. Remove from the oven and add the honey and mustard to the baking tray. Toss the carrots around so they all get coated in the honey and mustard.
  5. Sprinkle over the walnuts and you’re ready to serve.
