Middle Eastern Spiced Beef Wraps

Flavourful spiced mince is paired with crunchy fresh salad greens, creamy whipped feta and tangy pickled onions and served up in a soft flour wrap.

Finely dice 1 red capsicum and 1 zucchini (store together in an airtight container in the fridge). 


Prepare the spice mix (store in an airtight jar in the pantry).

  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp cumin seeds
  • 2 tsp ground coriander
  • 1 tsp sumac 
  • Pinch of chilli flakes

 

Prepare the whipped feta (store in an airtight container in the fridge).

Ingredients

  • 100g feta
  • ¼ cup greek yoghurt


Method

  1. To make the whipped feta, simply add the ingredients to a blender or food processor and blend until smooth and creamy. We find that if you use a blender you might need to add a juice of a lemon to get it to blend nicely.
  • Heating the wraps helps to soften them, making it flexible enough to roll and to hold everything inside.
  • Note that you will need to use 1 red onion across two elements – in the pickled onion and in the mince. 1/4 will need to be finely sliced while 3/4 needs to be diced.
  • If you have made the fritters you would have already prepared the whipped feta.

 

Shortcuts

  • Swap the quick pickled onion for raw red onion. 

Vegetables

  • You can add diced carrot and any colour capsicum you’d like to the mince.

  • Swap cos to iceberg lettuce, finely sliced cabbage or even spinach.

  • Add fresh diced tomato to the wrap.

 

Protein

  • For a vegetarian option, swap beef mince for 1 tin of lentils (drained and rinsed) and 2x capsicums and zucchini. 

 

Other

  • For a lighter option, omit the wrap and turn the meal into a salad, using the whipped feta as the dressing.

  • Swap the whipped feta for hummus. 

 

Ingredients

Quick pickled onions

  • ¼ red onion (finely sliced)
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp boiling water
  • ¼ tsp salt
  • ¼ tsp sugar 


Whipped Feta

  • 100g feta
  • ¼ cup greek yoghurt


Spiced mince filling 

  • ¾ red onion (finely diced)
  • 1 red capsicum (finely diced)
  • 1 zucchini (finely diced)
  • 600g beef mince
  • 2 garlic cloves (crushed)
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp cumin seeds
  • 2 tsp ground coriander
  • 1 tsp sumac
  • Pinch of chilli flakes
  • Olive oil
  • Salt and pepper

  • 8 large flour wraps 
  • ¼ cup mint (roughly chopped)
  • ¼ cup coriander (roughly chopped)
  • ½ bag cos (60g) 
  • ½ cucumber (sliced into half moons) 
Method
  1. Get started by preparing the quick pickled onions. In a small bowl or jar, add the salt and sugar; pour over boiling water and stir to dissolve. Add the vinegar and the finely sliced onions. Use your fingers to separate the onion slices and encourage them to soften; set aside while you prepare everything else.

  2. To make the whipped feta, simply add the ingredients to a blender or food processor and blend until smooth and creamy; set aside (note if you have made the fritters you would have already made it).

  3. To make the mince start by adding a generous drizzle of olive oil to a large fry pan over medium heat. Then add the diced onion, capsicum, zucchini, salt and pepper; saute for 5-10 minutes or until soft.

  4. Add a little more olive oil to the pan, then add the mince and cook for 7 minutes or until the meat has browned and all the liquid has evaporated.

  5. ‍Add the garlic, smoked paprika, ground cumin, cumin seeds, ground coriander and sumac; cook for 2-3 minutes until the spices are fragrant.

  6. Warm the wraps, you can do this using the packet instructions or place each wrap individually onto a dry hot plate, pan or griddle; cook until slightly charred, flip and repeat on the other side.

  7. Time to assemble the wraps. add some whipped feta to the base of each wrap, and top with some mince, lettuce, cucumber, fresh herbs and pickled onion; wrap up and enjoy.
