No Bake Nutty Chocolate Slice

This super simple, no-bake slice is the perfect little sweet treat or 3 pm pick me up! We love having a batch in the freezer to pull out when we’re after something sweet but nutritious. It’s made from all-natural, whole-food ingredients with a delicious dark chocolate topping.

Tips

  • Use whatever nuts and seeds you have on hand.
  • Swap cashew butter for almonds or peanut butter.
  • Swap dark chocolate for milk chocolate.
Ingredients
  • ¼ cup butter or coconut oil (melted)
  • ¼ cup cashew butter
  • 2 Tbsp maple syrup (optional)
  • 1 tsp vanilla extract
  • Pinch sea salt
  • 1 cup rolled oats
  • 1 cup toasted desiccated coconut
  • 1 cup roasted mixed nuts (we used cashews, almonds and hazelnuts)
  • ½ cup toasted mixed seeds (we used pumpkin and sunflower seeds)
  • 1 cup dates (soaked in boiling water, then drained reserving 2 Tbsp liquid)
  • 150g dark chocolate (we used 85%)
  • 2 tsp coconut oil
  • 1 Tbsp cacao nibs (optional)
Method
  1. In a small saucepan over low heat, combine melted butter, cashew butter, maple syrup (if using), vanilla extract, and a pinch of salt. Stir until well melted and combined.
  2. In a food processor, combine, melted butter mixture, oats, coconut, nuts, seeds, dates, and 2 tbsp of reserved date liquid. Blend until a sticky, malleable mixture forms.
  3. Press the mixture evenly into a lined brownie tin.
  4. Melt dark chocolate with 2 tsp of coconut oil. Pour over the mixture, sprinkle with cacao nibs if using, and place in the freezer to set for 4-6 hours or overnight.
  5. Remove from the freezer, cut into squares, and store in the fridge or freezer.
