Nutty, Coconut Muesli Bars

Store-bought muesli bars are often laden with sugar and questionable ingredients plus not to mention expensive! This is why we love making these Nutty, Coconut Muesli Bars, a blend of roasted nuts, toasted coconut, rolled oats, and dried fruits, bound together with a tasty almond butter and honey mixture. The perfect healthier muesli bar!

  • Roasting the nuts and seeds first and toasting the coconut gives these muesli bars a delicious depth of flavour.
  • You can use any nuts and seeds and dried fruit that you’d like.

 

  • Swap out the almond butter for peanut butter, tahini or cashew butter.

 

  • Swap out the honey for maple syrup.
Ingredients

2 cups mixed nuts and seeds (roasted and roughly chopped)
1/2 cup shredded coconut (toasted)
1 cup rolled oats
1 cup dried fruit (we used dates, apricots and raisins)
50g butter
1/4 cup honey
2 Tbsp almond butter
Pinch of salt

Method
  1. Line a square brownie tin with baking paper.
  2. Prepare the roasted nuts and seeds and toasted coconut.
  3. In a large bowl add the oats, dried fruit, coconut and roasted nuts and seeds.
  4. In a small saucepan over a medium heat, add the butter, honey, almond butter and salt. Melt and stir well to combine.
  5. Pour the butter mixture over the dry ingredients and mix well.
  6. Pour it into the tin and press down firmly with the back of a spoon.
  7. Pop into the fridge to set overnight before cutting them into squares. Store in the fridge. 
Variations
