Our Favourite Summer Bircher

We love bircher for an easy summer breakfast. It’s perfect for meal prep as you can make a big batch on a Sunday and have it for breakfast throughout the week, it’s also great to have in the fridge you are hosting friends or family over the festive season. Feel free to use any milk and any nuts or seeds you have on hand.

  • If you’re making this for breakfasts throughout the week only add as much apple as you need for a serving otherwise the apple will go brown.
  • Add the zest of an orange
  • Add some toasted pumpkin seeds or sunflower seeds
  • Add any dried fruit you’d like
  • Add a pinch of ground ginger

 

Ingredients
  • 1 ½ cups rolled oats
  • ¼ cup dates (finely chopped)
  • ¼ cup roasted almonds (roughly chopped)
  • 3 Tbsp chia seeds
  • 3 Tbsp toasted coconut
  • 2 Tbsp hemp seeds
  • ½ tsp cinnamon
  • 2 cups milk (we like using cashew milk or coconut milk)
  • 1 cup water
  • 2 apples (grated)

To serve (optional)

  • Greek yoghurt or coconut yoghurt
  • Seasonal fresh fruit
  • Granola
  • Honey or maple syrup
Method
  1. Add all of the ingredients (except the apple) to a large airtight container.
  2. Mix well to combine and pop in the fridge overnight or for at least 4-6 hours.
  3. Before serving add the grated apple and top with some yoghurt and fruit of choice.
