Salad Dressings – three ways

Salad dressings when well balanced are the key to enjoying your greens, and also great for grain based salads too.

  • As long as you follow the basic formula of 1/3 cup oil, 1/4 cup acid, 1 tsp emulsifier, 1 tsp sweetener then you can play around with any combinations and ingredients that you’d like.
  • It’s also nice to add in fresh herbs, ginger, garlic, and spices for extra flavour.
Ingredients

Basic Dressing 

  • 1/3 cup of oil (e.g. extra virgin olive oil)
  • 1/4 cup of acid (e.g. apple cider vinegar)
  • 1 tsp emulsifier (e.g. dijon mustard)
  • 1 tsp sweeter (e.g. honey)
  • Pinch of salt and pepper

Creamy, Tahini Dressing

  • 1/4 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 2 Tbsp hulled tahini
  • 1 tsp dijon mustard
  • 1 tsp sweeter (e.g. honey)
  • Pinch of salt and pepper

Asian Inspired Dressing

  • 1/4 cup of olive oil
  • 1/4 cup of rice wine vinegar
  • 1 Tbsp sesame oil
  • 1 tsp miso paste
  • 1 tsp sweeter (e.g. honey)
  • Pinch of salt and pepper
Method
  1.  Add all of the ingredients into a jar with a lid and shake well or whisk together in a small bowl until everything is combined.
  2. Store in a jar or airtight container in the fridge for up to 5 days.
