Sticky Stir Fried Beef with Vermicelli Noodle Salad

Salty, sticky and sweet umami stir-fried beef is served on a fresh, vermicelli noodle salad packed with fresh crisp veggies and a tangy dressing.

Prepare the marinade for the steak (store in an airtight container in the fridge). 

Ingredients

  • 4 Tbsp tamari 
  • 2 Tbsp sweet chilli sauce
  • 1 Tbsp ginger (grated) 
  • 1 clove garlic (crushed) 


Method

  1. Simply add all the ingredients to a small container and mix well. 

 

Prepare the salad dressing (store in a glass jar in the fridge). 

Ingredients

  • 2 Tbsp rice wine vinegar
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp fish sauce
  • 1 tsp sweet chilli sauce
  • 1 garlic clove (crushed)


Method

  1. Simply add all the ingredients into a glass jar and shake well to combine.
  • We like to cook vermicelli noodles by adding them to a large bowl, pouring over some boiling water and letting them sit for 3-5 minutes before rinsing them under cold water and using scissors to cut them slightly.

Vegetables

  • Add some grated carrot.

  • Swap out the cos for finely shaved cabbage.  

 

Protein

  • You can swap out the beef for chicken, prawns or tofu if you’d prefer.  

 

Other

  • Swap out the mint for Thai basil.

  • Add some roasted peanuts or cashews to the salad.

 

Ingredients

Stirfry beef

  • 600g stir-fry beef or steak of choice cut into thin strips
  • 4 Tbsp tamari
  • 2 Tbsp sweet chilli sauce
  • 1 Tbsp ginger (grated)
  • 1 garlic clove (crushed)
  • Coconut oil (for cooking)


Salad

  • 100g vermicelli noodles
  • 120g mixed leaf lettuce (1 bag)
  • 1 yellow or red capsicum (sliced)
  • 1 mini cucumber (sliced into half moons)
  • 200g cherry tomatoes, 1 punnet (cut into halves)
  • 1 red or green chilli (finely sliced)
  • ½ cup coriander (roughly chopped)
  • ¼ cup Vietnamese or standard mint (roughly chopped)
  • 2 Tbsp toasted sesame seeds


Dressing

  • 2 Tbsp rice wine vinegar
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp fish sauce
  • 1 tsp sweet chilli sauce
  • 1 garlic clove (crushed)
Method
  1. Get started by marinating the steak. Add the thinly sliced steak to a medium-sized bowl with the tamari, sweet chilli sauce, ginger and garlic; set aside while you prepare everything else.

  2. Cook the noodles as per packet instructions or see tips, once cooked run under cold water and set aside.

  3. Add the cooked noodles, cos, capsicum, cherry tomatoes, cucumber and herbs to a large platter or salad bowl; set aside.

  4. Heat a large pan over a high heat, add a little coconut oil and stirfry the steak for 2-3 minutes until the sauce has reduced and turned sticky.

  5. Once cooked, set aside to cool for a couple of minutes while you dress the salad.

  6. To make the dressing simply add all ingredients to a glass jar and shake well to combine; pour the dressing over the salad and toss well. Scatter over the stir-fried beef and sesame seeds.
