Carrot Cake Baked Oats

This delicious one-bowl Carrot Cake Baked Oat brings all the flavours of carrot cake into a healthy and breakfast-friendly form. Loaded with wholesome ingredients like oats, protein-rich eggs, carrots, cinnamon, sweet raisins, and omega-packed walnuts. Plus, its ease of preparation makes it perfect for busy weekdays and freezes well too. 

Baked Oats Recipe

Ingredients

  • 2 cups rolled oats
  • ¼ cup desiccated coconut
  • 2-4 Tbsp coconut sugar (depending on how sweet you like it) 
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 ½ cups grated carrots
  • 1 Tbsp fresh ginger (grated)
  • 2 eggs (whisked)
  • 400ml milk of your choice (we used coconut milk)
  • ½ tsp pure vanilla extract
  • ¼ cup raisins or dates
  • ⅓ cup walnuts (roughly chopped)


Optional toppings

  • a dollop of greek yoghurt or our vegan cream cheese icing
  • sprinkle hemp seeds, walnuts and/or pumpkin seeds
  • drizzle of maple syrup

Method

  1. Preheat the oven to 180 degrees.
  2. In a large bowl, combine the rolled oats, desiccated coconut, coconut sugar, baking powder, ground cinnamon, and a pinch of salt.
  3. Add the grated carrots, fresh ginger, whisked eggs, milk of choice, and pure vanilla extract to the dry ingredients. Mix until well combined.
  4. Gently fold in the raisins or dates and chopped walnuts into the mixture.
  5. Pour the mixture into a greased baking dish and place it in the preheated oven for about 30 minutes or until cooked through.
  6. Once cooked, allow the bake to sit for 10 minutes before cutting it into portions.
  7. Serve with a dollop of Greek yoghourt or our vegan cream cheese icing.

Vegan Cream Cheese Icing Recipe

Ingredients 

  • 1 cup raw cashews (soaked in hot water for 1 hour)
  • ½ cup (125ml) coconut cream
  • ½ lemon (zest)
  • 1 Lemon (juice)
  • 1-2 Tbsp maple syrup

Method 

  1. Add all the ingredients into a high speed blender, blend until smooth and creamy. 
  2. Store in an airtight container in the fridge *the icing will harden and become thicker when cooled, bring to room temp before serving.
