Christmas Panforte Raw Slice

Get into the festive spirit with this Christmas Panforte Raw Slice! It’s packed with a medley of dried fruits, roasted nuts, and a hint of seasonal spices, this sweet treat is bound together with a rich, dark chocolate and makes for a great home-made gift idea for someone special this Christmas.

Ingredients
  • 2 cups mixed dried fruit, roughy chopped (we used apricots, figs, currants and cranberries) 
  • 2 cups mixed roasted nuts, roughly chopped (we used almonds, hazelnuts and pistachios) 
  • 2 Tbsp cacao powder
  • 1/2 tsp cinnamon
  • 1/2 tsp mixed spice 
  • 1/4 tsp ground ginger
  • Pinch salt
  • 1/4 cup honey
  • 2 Tbsp melted butter or coconut oil
  • 150g dark chocolate (we used 92%) 
Method
  1. Add the dried fruit, nuts, cacao powder, spices and salt to a large bowl and mix well.
  2. Add the chocolate to a double boiler, once melted add the honey and butter or coconut oil and mix well to combine.
  3. Pour this mixture over the fruit and nut mixture and mix well to ensure everything is coated in the chocolate mixture.
  4. Line a brownie tin with baking paper and pop in the freezer to set for 4-6 hours or overnight.
  5. Remove from the freezer and cut into bite-sized pieces.
  6. Store in a glass jar or airtight container in the fridge.
