This dip is so simple to prepare and full of flavour – tangy feta, sun-dried tomatoes, spices and a hint of sweetness from dates.

Ingredients
¼ cup roasted cashews
1 tsp cumin seeds
1 tsp coriander seeds
100g feta
8 sun-dried tomatoes (drained)
2 dried dates
¼ cup olive oil
A pinch of chilli flakes (optional)
Salt and pepper
Method
Add the cumin and coriander seeds to a small fry pan over low heat and toast for a few minutes or until fragrant.
Add the roasted cashews, toasted spices and the remaining ingredients into a food processor or blender and blend until fully combined; season to taste.
