Roasted Cauliflower with Tzatziki, Feta and Pine nuts

We’ve paired golden, crispy roasted cauliflower with homemade tzatziki, feta and pine nuts for a simple but delicious veggie side dish.

  • 1 cauliflower (cut into small florets)
  • 100g feta (crumbled)
  • ½ cup tzatziki
  • cup coriander (roughly torn)
  • 2 Tbsp pine nuts (toasted)
  • ½ lemon (zest)
  • Olive oil
  • Salt and pepper
  1. Preheat the oven to 200 degrees fan bake.

  2. Pop the cauliflower on a baking tray, drizzle with olive oil and season with salt and pepper.

  3. Cook for 20-30 minutes until golden brown and crispy.

  4. Once cooked, add to a large plate and toss through the feta, pine nuts and coriander, then dollop over the tzatziki.
