Sun-Dried Tomato and Feta Dip

This dip is so simple to prepare and full of flavour – tangy feta, sun-dried tomatoes, spices and a hint of sweetness from dates.

  • ¼ cup roasted cashews
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 100g feta
  • 8 sun-dried tomatoes (drained)
  • 2 dried dates
  • ¼ cup olive oil
  • A pinch of chilli flakes (optional)
  • Salt and pepper
  1. Add the cumin and coriander seeds to a small fry pan over low heat and toast for a few minutes or until fragrant.

  2. Add the roasted cashews, toasted spices and the remaining ingredients into a food processor or blender and blend until fully combined; season to taste.
